I will be honest. A few weeks ago, I had no idea what Kefir was. Geez, was I in the dark? I had no idea of the benefits of Kefir, and what it could do for your immune system. Kefir is smooth, yet tart tasting, is a close cousin to yogurt and is sometimes referred to as “The Champagne of Dairy”. Lifeway Kefir has a consistency similar to that of heavy cream, and tastes much like a yogurt smoothie. If I had to taste the difference in the two, I’m not sure that I could.
If you are sensitive to Lactose, have no fear! Lifeway Kefir is 99% lactose free, and is completely gluten free. You can drink it and not have to worry about the bad effects that would normally come with a dairy product.
We are always looking for new and healthy things to eat around the Ramble household, so I decided to come up with something for breakfast. So, this past weekend I went and fetched a 32 oz bottle of Lifeway Lowfat Kefir Smoothie from my local Winn-Dixie and put together a recipe that is certain to knock the socks off of your kids.
They have no idea that they are getting all of the Lifeway Kefir goodness that includes 12 probiotics, is made from milk that comes from cows not treated with pesticides, antibiotics, or synthetic growth hormones. The cows are grass fed and GMO free.

Dad’s Very Berry Lemon Kefir Muffins
- 2 cups of All Purpose flour
- 1/2 tsp salt
- 1 tbsp baking powder
- 1/2 tsp of ground cloves
- 1 cup sugar
- 1 stick unsalted butter
- 1 1/2 cup Lifeway Lowfat Kefir Smoothie ( I chose raspberry, but you could use any flavor)
- 1/3 cup vegetable oil
- Juice and zest of 1 lemon
- 2 Large eggs
First, preheat your oven to 400 degrees. Combine all of the dry ingredients in a large bowl. Whisk them together, being sure to mix all of the ingredients well.
Once this is done, put the butter in a small dish and microwave for about 45 seconds or just until it is melted. Be careful, you don’t want to burn it (or yourself). To this add the eggs, the Lifeway Kefir, lemon juice/zest, and the vegetable oil. Mix these ingredients together and then combine with the dry ingredients in the larger bowl.
After the batter is nice and smooth, then fold in the fruit. I chose raspberries (frozen), but you could also use blueberries or just about any other berry of your choice. I found that 1 cup gave a decent amount of fruit in each bite, but you certainly could adjust that to your liking as well.
Spoon the batter into muffin tins until almost completely full. I sprayed mine first with cooling spray, but you could also use liners if you like.
Cook them in the oven for about 20-24 minutes, at 400 degrees. I checked the at 22 minutes and they were done, but I left them in for a couple more minutes because I like them just a little more brown on top. #KefirCreations
